Wildberry Balsamic Shrub Cocktails

Via Wide Open Eats

1 cup sliced strawberries

1/2 cup blackberries

1/2 cup blueberries

1 1/2 cups sugar

1/4 cup balsamic vinegar

1/2 cup red wine vinegar

Combine the berries in a medium bowl, sprinkle with sugar and toss to coat. Cover and let sit for at least 4 hours (or overnight). Strain the mixture into a bowl through a fine mesh sieve and throw away the solids. Mix in the balsamic and red wine vinegars, transfer to a clean jar or airtight container and let sit for 24 hours. When all of that waiting is over, you have a shrub! Some cocktail suggestions: Combine 2-3 tbsp of the shrub with 1 ounce of vodka or gin (or skip for a mocktail), then pour over ice and top it off with club soda and garnish with fresh basil or mint.

Our thoughts: We went in a bit of a different direction this week after being inspired by Flutter Social bride @sgambat1, who told us about the amazing cocktail she had at Heck's Cafe in Cleveland, called the New Ohio City. Key ingredients: strawberry infused vodka, a mixed berry balsamic shrub, and fresh basil. Shrub!? We needed to know more and discoverd a delicious and versatile mixer that's easy to make and worth the wait (plus it keeps for up to 6 months in the fridge 🙌). We added some cocktail suggestions to the recipe above but don't stop there. Experiment with your fancy new shrub, then let us know how it goes 🥂
